Made it just once so far… turned out to be healthy and reasonably tasty. Looks a little dry on the picture and in reality too. Maybe add more oil/milk next time.
Ingredients
- 4 egg yolks
- 4 egg whites
- 70g dates without core
- 30g walnuts
- 50g milk (more if wants to be more moist)
- 20g honey
- 120g low-gluten flour
- 2g baking soda
- 10g brown sugar (for egg yolk)
- 50g brown sugar (for egg white)
- 50g (or 70g) corn oil
- 0.5g Salt
Instructions
- Clean the dates, remove the core, chopped into small pieces. Grind the walnuts into smaller pieces. Mixed dates, walnuts and milk.
- Add the oil into the Step 1 output, mixed well.
- Whisk egg yolk with the brown sugar (10g) on top a heated water container (pot), mix quickly and mix well.
- Add the output of Step 2 into Step 3, add honey, mixed well, let it sit.
- Whip up the egg white, add brown sugar in three batches, whip till the egg white is stiff.
- Add the Step 5 into Step 4 in three batches, mix quickly and mix well – do NOT over mixed.
- Sift the dry ingredient into Step 6 output, mix quickly until well incorporated (do not over mix).
- Pre-heat the oven to 340F (170C), prepare the pan with brushed butter, put the batter into the pan.
- Bake for 30 min (check with Stick).
