Key Lime Pie

The key in this dessert is the Lime 😋That sour flavor mingled perfect sweet makes you want to have more… and more… definitely dangerous for weight management! It is very easy to make.

Ingredients

Crust

  • 1 1/2 cup graham cracker crumbs
  • 1/3 cup brown sugar
  • 4 tbs unsalted butter
  • (you could chose to buy the already-made crust, which I might do next time)

Filling

  • 2 14-oz cans of sweetened condensed milk
  • 1 cup plain Greek yogurt (we use the one from Costco)
  • 1 tbs grated lime zest
  • 3/4 cup fresh lime juice (about 8-10 limes)

Topping

  • 1 cup cold heavy whipping cream
  • 2 tbs powder sugar
  • 1 tsp grated lime zest
  • (optional) Some lime slices

Instructions

Crust

  1. Preheat the oven to 375F.
  2. Mix the graham cracker crumbs, brown sugar, and melted butter until the mixture is well combined. Press the crumbs firmly into the bottom and up the sides of a 9 x 1.5 inch pie pan. You can use a flat bottom small container to do the work, I did not do that well, but anyway, as long as it is spread evenly and no hole, it is ok.
  3. Bake for 10 min in the oven (when it turns brown), then let it cool for about 10-15 min outside the oven.

Filling and Into Crust

  1. Lower the temperature to 350F.
  2. Mix all the filling ingredients well in a bowl and pour into the crust.
  3. Bake for another 15 min.
  4. Take it out of the oven and let it cool for 30 min.
  5. Frig for at least 3 hours before serving.

Topping

  1. In the mixer, beat the heavy whipping cream to soft peak.
  2. Put the power sugar in, then beat till peak firmed up.
  3. Add lime zest, mix gently.
  4. Top the pie before serving, and put on the lime slices for deco (optional).
