Tiramisu a la Judy

Got this recipe from good friend Judy who is proficient in cooking //admire! It is super tasty and reasonably easy to make. Thanks Judy 😍

Ingredients

  1. 1 1/2 cup brewed strong coffee (can be reduced depending on the need)
  2. 3/4 cup Kahlua
  3. 2 boxes (total of 16 oz) mascarpone cheese
  4. 1/4 cup sugar
  5. 1/4 cup whipping cream
  6. 6-9 oz ladyfinger or other kind of sponge cake
  7. 1/4 cup cocoa power
  8. 2 large eggs

Instructions

  1. Place 2 egg yolks, 1 TBS coffee, sugar, 2 TBS Kahlua in a large bowl and beat 2-3 min.
  2. Add mascarpone cheese and whipping cream (add as necessary to get the desired consistency). Mix well until smooth.
  3. In another bowl, beat the 2 egg whites until stiff peaks form. Gently fold into the mascarpone mixture and mix well.
  4. Place the remaining coffee and Kahlua in a shallow dish and stir together (won’t use much but keep the ratio).
  5. Quickly dip the ladyfinger (or the cake slice) into coffee mixture (it is very important to do this quickly so they do not take up too much liquid and go soggy), and place them in a single layer on the bottom of the serving dish.
  6. Spread the mascarpone mixture over the ladyfingers and dust with cocoa, make sure to use a find sieve.
  7. Repeat 5/6 for the second layer. Usually 3 layers are good, distribute the mascarpone mixture as 1:1:2 from bottom to top.
  8. Cover and refrigerate overnight, or at least an hour before serving.
