Sticky Rice Cake

I love everything made of sicky rice flour so this is for me! Very simple to make and yummy with brown sugar syrup! Do not mind the shape and look, it is good in taste 😎

Ingredients

  • 150g sticky rice flour
  • 3g baking powder
  • 30g corn oil
  • 1/2 tsp vanilla extra
  • 30g sugar
  • 135g milk
  • 1 egg

Brown Sugar Syrup

  • 180g brown sugar
  • 20g Crystal Sugar (Bing Tang)
  • 200g water

Instructions

  1. Scramble the egg, add milk, oil, vanilla extra and baking power, mix well.
  2. Sift the sticky rice flour into the mix.
  3. Stir evenly and mix well.
  4. Put the mix into the baking pan with parchment paper.
  5. Set the oven to 375F, pre-heat for 5 min.
  6. Bake for 35 min.

Brown Sugar Syrup

Heat all ingredients in a pan to bring to boil with high heat, then lower the heat and keep stir until syrup formed (the syrup is a little sticky to the spoon but not too dense). Do not over do it, i.e. to dense when it is hot, since when the syrup is cooled down, it will becomes denser, otherwise it might becomes solid when cool down. So it is perfectly ok to look a bit loose when it is done in the hot pot.
